
This dish is very filling by itself and can make you feel full for a long time, thereby preventing the false hunger pangs we experience due to the wet, moist and inviting rainy weather.
1 cup boiled quinoa
1 tea spoon of olive oil
1 cup mushrooms blanched in hot water
1 cup zucchini cut chopped fine
1 cup spinach chopped fine
1 cup parsley
½ cup rocket leaves.
Method
Heat oil and add garlic, chilli flakes and fry until slightly brown.
Add the zucchini, mushrooms, spinach and stir fry for a few minutes.
Add the parsley and rocket leaves.
Add the quinoa immediately along with salt, 1 tea spoon of soya sauce and some white pepper powder.
